update on goals

I cannot even believe we are already half way through 2015! I guess time really does fly when you're having fun! 
In January, I listed some small goals for myself and I'm just going to do a check up on how far I've come and if any has changed. 
Here are the goals from my January post: 
1. Disney Vacation. 
2. Second honeymoon to Excellence resort.  
3. Pay off my credit card. 
4. Breast enhancement. this is more of a pending goal.
5. Savings. 

1. Disney vacation. Still in the works, we have two big trips coming up in the next 6 months that I think this one will have to wait until next year. 
2. Excellence Resort. Again, two big trips coming up. This one might need to wait until next year as well. 
3. Pay off credit card. CHECK!  I did this and it is amazing. Now I am able to put money back for savings! 
4. Breast enhancement. This is still pending. This is more of a long term goal, not really a 2015 goal.
5. Savings. We are able to say that we have a savings that is worth 3 months of our expenses.  

So our priorities are straight in saying we have attacked the money goals with no problem, now its time to start attacking my travel goals!

Last week my mom and I took a cooking class at Sur la Table. We cooked our own lunch under the instruction of a Chef. It was very fun and very delicious. Cooking to me is like my let go when I get home from work. It is so relaxing, all the different smells and the science of getting the food to be just right. My husband doesn't mind it being one of my hobbies either. ;) Sur la Table is such a fun way to learn some tricks for cooking and pick up a yummy lunch or dinner too. They have different meals and menus everyday. That day we cooked mediterranean: 
Moroccan Carrot Salad, 
Quinoa Tabbouleh, 
Grilled Prawns with Chermoula on top of couscous with pine nuts and raisins, 
and for dessert we made fresh grapefruit with Rose Water Syrup with greek yogurt and toasted Pistachios. 
I went straight to the grocery store after and bought the ingredients for the dessert, it was so divine, I definitely went back for seconds!

Books I'm Loving

Besides shopping, one of my favorite hobbies is reading. There is something about getting lost in a book. 
Right now I am reading Anthony Doerr's All the Light We Cannot See. Its based in the 40's in during the rise of Hitler. It tells two stories of a young German boy and a young blind girl who lives in France and how their lives cross. If my description isn't good enough you can rest well knowing that it won a Pulitzer Prize and it rates a 4.6/5 stars on Amazon. 

It has me really captivated and I can't wait to see how these two young kids meet each other.

Anthro dress

Let's talk about one of my favorite stores ever. Anthropologie. 
Every spring I splurge and buy a dress from Anthro. 
This year I chose this long dress, it reminds me of a mumu but in a more flattering way. It's called  Summertide Swing Dress

a (tasty) green smoothie



Everyone is on the juicing kick right now. Juicing is great and I love going to Whole Foods and picking out juices to drink during the week, but what i really love is smoothies. 
I just recently bought a blender, I know I know, who doesn't own a blender right? I just never got around to it when I turned into an adult okay! Anyway I digress. 
Buying a blender was an awesome idea! We use it mostly for making breakfast smoothies, its a great way to get Taylor eating healthy without him even knowing it. I usually make a Peanut Butter and Chocolate Oatmeal smoothie the night before he goes to work and that way he can just grab it on the way out the door for breakfast. He loves it. 

Today I made a spinach smoothie, and guess what!? I can't even taste the spinach, its amazing. 
Here is what I used: 


a handful of spinach
one banana
a cup of orange juice (mine had mango in it)
1/2 cup of frozen mango (frozen makes the smoothie thicker)
two spoonfuls of vanilla yogurt (just however much your feeling that day) 
about a tablespoon of lemon juice
and a couple of apple slices
and a 1/2 teaspoon of cinnamon (not pictured)

and ta-da! a yummy healthy smoothie! 

Important: grind the spinach and orange juice first until the little spinach bits are gone, then add the rest of the ingredients. 

I'll be enjoying this smoothie by the pool if you need me!

Our Wedding

A whole two months have passed and I've finally been inspired to write a new post. Blogging is hard. Especially when you're the only one reading. But I am not doing this for anyone but myself to put my thoughts into the online void (thank you Meg Ryan in You've Got Mail). 

A little over 6 months ago we got married. It was perfect. 
It was a colorful fall day on November 15th and it was a gathering. Thats what I pictured my wedding, a gathering of our closest friends and family to celebrate our marriage. 


This was just outside our church. The leaves on the trees were gorgeous.

Our gorgeous, delicious sour cream cake with cream cheese frosting, I went with the "naked" style cake and was not disappointed! Taylors aunts made all the desserts, including the cake!, cut down our costs a lot.
